The deer and elk hunts start soon for us. Like in 2 weeks! We still had a bunch of chunked meat in the freezer from last years hunts. We kept saying we needed to make more sausage and burger with it but just havent gotten around to it. Finally with the new hunts looming in the future we needed to make some room in the freezers. Ya know only about 60 lbs worth.
First we started with summer sausage. You have to grind the chunks once, add the seasoning and cures and then grind again to mix it well. Then you run it back through the grinder with out the blade to push it through the tube and into the sausage casings
We did 30 lbs of that which makes 6 full size sticks and like a half a one. I made the half one into two small ones
Then we went onto ground breakfast sausage and burger.
I found these cute bags at Smith and Edwards and decided to try them. I liked them one because they were camo.. two because they were easy to mark and they were cute ha! Ive never used bags before so Im interested to see how well they work
My husband.. he is something else. We actually have fun doing things like this. He is such a nerd. He of course wont smile for pictures and loves to pull stupid faces.. so he gets them put on the internet..

about 12 pictures later I catch him between laughing and a goofy face and get close enough of a smile!
The bags are supposed to be 1lb bags but I stuff them tight. I dont like air pockets. We ended up with 7 bags of breakfast sausage and 11 bags of elk burger. Then you just check the boxes on the package of what they have in them. Fabulous! They were really reasonable too. I got 36 bags for $7
